Stevia rebaudiana is a medicinal plant that belongs to the genus Stevia and the Asteraceae family. It is widely exploited as a natural sweetener, with products that are 300 times sweeter than sugarcane. The presence of calorie-free steviol glycosides contributes to the sweetening potential and, thus, using stevioside as a sweetener compound for type 2 diabetes patients has been recommended as a healthy practice. Steviol glycosides with intense sweetening capabilities have been identified after detailed profiling of the plant species. The leaves of Stevia rebaudiana also have antimicrobial, antihyperglycemic, antioxidant, antitumor, and anti-inflammatory potential. The minimal production of plant material, on the other hand, is unable to meet the increasing market demand. Researchers from all over the globe are attempting to improve the production of key Steviol glycosides in S. rebaudiana by using various biotechnological techniques. The book contains the research work conducted in the last twenty years on the different aspects of biotechnology to enhance the production of steviol glycosides. Besides this, a protocol for in-vitro production of adventitious roots of S. rebaudiana is also discussed.
