Biofilms pose a significant challenge in dairies because they resist standard cleaning-in-place (CIP) procedures, leading to persistent microbial contamination, equipment fouling, and risks to food safety and product quality. These complex microbial communities, protected by a matrix of extracellular polymeric substances (EPS), adhere tenaciously to dairy equipment surfaces and require specialized cleaning techniques and equipment to prevent their formation and ensure their effective removal. The fight against biofilms in dairy processing does require collaboration between engineers, researchers, and industry players to create practical, scalable solutions for sustainable, high-quality products. This interdisciplinary approach is necessary to bridge the gap between academic research and industrial application, enabling the translation of scientific discoveries into real-world technologies that effectively prevent and control biofilms on processing equipment, ensuring food safety and product stability.
